Peanut Butter and Me
I’ve loved peanut butter since before I can remember eating. My grandmother would let me eat it straight out of the jar, and my favorite spoon was the tiny little baby spoon she still had in her flatware drawer in the kitchen. Mom always fussed when I did this at home, but you know how it is. I knew the real scoop – Maw had let Mom eat it out of the jar when SHE was little, so I only did it at home when she wasn’t around.
I went through a phase of eating peanut butter sandwiches for breakfast. In fact, I developed an amazing double-peanut-butter-sandwich, using three slices of bread, and lots of peanut butter between. That finally stopped when Mom realized that I was using about a half a cup of peanut butter PER DAY!
Peanut-butter-and-jelly-all-mixed-up-together became my “Sunday Night Special” when I was about 8, and I still love it.
I went through the crunchy peanut butter phase, but I always ended up back with Jif Smooth. Yes, my mom was a choosy mom, and I am, too.
You can imagine my dismay when my youngest daughter came up DISliking peanut butter. What did I do wrong? I mean, when there’s nothing else good in the cupboard, there’s ALWAYS peanut butter. Maybe I was a choosy failure as a mom in that instance.
How I Like PB
Now don’t make me eat peanut butter in totally weird ways. I love it as a sandwich, dip, entrée (as PB, not anything else!), fudge, pie, etc. There’s a burger at a local establishment, Adams Breezy Hill Farms, that features their “Signature Nutter Butter Bacon Burger,” and I’ve been told it’s amazing. I haven’t tried it yet. But bacon and peanut butter? How could it be bad? Hmm . . .
But for me, it’s a guilt-free sweet. Sometimes. When you eat it with celery. Here’s my favorite peanut butter candy recipe that is NOT guilt-free, unfortunately, but worth the risk! I found this recipe in 1995, in Taste of Home magazine, and have used it almost every Christmas since!
